  • Oregano: it is a perennial shrub. Collected when it is in full bloom by cutting. The essential oil is used in perfumery, pharmacy and the dry leaves as flavoring in food. Oregano is in the second position of our country’s export aromatic and medicinal plants after the saffron. The 62.5% of their value is exported to third countries, where the US is the most significant that absorbs 55.3%.
  • Rosemary: is a perennial shrub. Collected the flowers and leaves. It is at full capacity in the third year. The essential oil is used in perfumery, pharmacy and the production of soaps and as a preservative in foods and beverages. It has essential oil content of 1.5-3%. The dry flowers and leaves are used as flavoring in various foods.
  • Saffron: is the main export product with 51% of the total value of exportable products. From this it is produced one of the most expensive spice in the world. Collected the pistil of the flower. Gives 0.8-1 kg per hectare and gross income 1500-1800 € per acre. In Greece it is grown exclusively in Kozani.
  • The mountain tea: is very aromatic perennial herb. Yields about 150 kg of dried herbal per acre. The content of essential oil is 0.05-1%. The essential oil is used in perfumery and pharmacy.
  • Mint: it is an aromatic, medicinal  plant, useful and, in beekeeping. The aboveground part contains essential oil used in perfumery and soap, in beverages and confectionery. The content of essential oil is about 3.5-4%.
  • Anise: is an annual herbaceous plant. Yields 100-150 kg fruit per acre. Used in the production of ouzo, raki and as flavoring in food. Produced essential oil, which is suitable for the beverage industry .
  • The dittany of Crete: it is a herbaceous perennial plant. Collected in full bloom with 3-5 cuts per year. Used as a decoction. The essential oil is used in the pharmaceutical and beverage industry and in the production of vermouth.
  • SperMint: it is a perennial plant. Collected just before flowering, for dried herbal, while for essential oil is collected in full bloom. The content of essential oil is 0.8-2% and yields 150-200 kg dried herbal per acre. Used as flavoring in foods, and as a decoction.
  • Sage: it is a perennial herbaceous plant. Collected stems with the flowers and leaves. The content of essential oil is 1.0% in flowers and 1.9% in the leaves.
  • Basil: It is an annual herbaceous plant. Suitable for cultivation in areas with mild climate. The essential oil is used in perfumery, pharmacology and manufacture of soap. It contains 0.5-1.2% essential oil.
  • Cumin: is an annual herbaceous plant whose dried fruits are used  in cooking for their flavor. Also its seeds contain 3.2% essential oil .
  • The Coriander: is an annual plant. Used as a decoction of dried seeds for medical reasons. The essential oil containing used in the food industry, production of soaps etc. The content of essential oils is between 0.03% – 2%.
  • Lavender: is a low perennial shrub. Collected in  the full flowering period. The essential oil is used in perfumery, soap, pharmacy. The content of essential oil is 1-3%.
  • The marjoram: is perennial. For production of essential oil is collected in full bloom by cutting and to produce a dried herbal is cut just before anthesis. The essential oil is used in perfumery, pharmaceuticals, and the dried herbal as flavoring in food or as a decoction.
  • The melissa: is perennial. Gives 2-3 productions annually. The essential oil is used in perfumery, in pharmacy, but also in the preparation of vermouth. The content of essential oil is from 0.13 to 0.20%. Dried leaves are used as a decoction.

  • The thyme: is a perennial herbaceous plant of warmer and cooler areas. It is an excellent honey bee production plant. The essential oil is used in perfumery and cosmetics, but also in homeopathy. It contains 1.5 to 3.4% essential oil.
  • The fennel: The fennel is a herbaceous plant with a height of 0.5-1.5 meter whose leaves are very similar to dill. The fennel besides cooking can be eaten raw in salads. From its seeds, it is produced by distillation an essential oil that is used in the beverage industry, perfumery and pharmaceutical.
  • Laurel: It is an evergreen tree. The leaves are collected in early autumn. Its leaves contain 2.7 to 3% essential oil. The leaves and flowers are used as flavoring in food. The essential oil is used in perfumery, soap.
  • The savory: is a perennial shrub. The dried leaves and flowers are used as flavoring. Also The essential oil is used in perfumery and pharmacy.
